Ingredients for 2 servings:

  • 2 tablespoons of corn flour ,
  • 2 tablespoons unsweetened cocoa powder,
  • 2-3 tablespoons of brown sugar (mascabado)
  • 1/2 teaspoon ground cinnamon ,
  • 1/2 teaspoon aniseed, crushed,
  • 1 cup of water,
  • 1 cup skimmed milk

Preparation:

1. Mix the corn kernels , cocoa powder, sugar, cinnamon and aniseed in a saucepan.
2. Add 1/2 cup of water and blend until you get a thick paste. Add the remaining water and milk and beat again.
3. Place the pan over medium heat and bring to a boil, beating constantly.
4. Lower the heat to medium-slow and simmer for 5 minutes.
5. Try adding more sugar if desired.

Ingredients (4 servings):

  • 1/2 cup peeled yellow corn ,
  • 420 ml of evaporated skimmed milk,
  • 5 tablespoons of sugar,
  • 4 cups of water,
  • 1 teaspoon of vanilla extract,
  • cinnamon ,
  • 3/4 teaspoon ground nutmeg.

Preparation:

  • Place the corn in a bowl with 1 cup of water.
  • Then cover and let it soak in the fridge overnight.
  • The next day, mix the corn and the water in which it was soaked.
  • Then, put 3 cups of water and the broken cinnamon in a pan, over high heat and bring to a boil.
  • Lower the heat, cover the pan without closing it completely and let it boil for half an hour or until the corn is tender.
  • Remove and discard the cinnamon pieces.
  • Then, Add the evaporated milk and sugar, Boil for 5 minutes.
  • After that, remove from heat and let cool to room temperature.
  • Place in the fridge for an average time, at least 4 hours and up to 3 days maximum.
  • Add the vanilla extract and nutmeg and stir.

Try adding more sugar and nutmeg if desired. Serve in tall glasses with ice cubes.
