Kitchari is a traditional dish in Ayurvedic medicine, which is known for its ability to detoxify or cleanse the body and reduce cell aging.
Kitchari provides abundant nutrients as well as preventing waste from the body. This type of stew is made with green beans , basmati rice, seasonal vegetables, clarified butter and spices.

INGREDIENTS:
(Four servings)
- 1 cup of basmati rice. If you can’t, use brown rice , but let it soak a day before cooking.
- A cup of green beans . You can replace it with red lentils .
- 3 tablespoons of clarified butter
- 2 teaspoons of cumin seeds
- 3 teaspoons of Mustard Seed
- A teaspoon of coriander powder
- 1 tablespoon fresh and crushed ginger
- One teaspoon of turmeric powder
- A teaspoon of asafoetida ferrula
- Sal do mar
- 1 organic tomato , peeled and finely chopped
- 4 to 6 cups of water
PREPARATION MODE:
(Total cooking time: 30 to 40 minutes)
- Place the clarified butter in a pan over low heat.
- When it starts to give off a delicate scent (30 seconds to 1 minute), add 2 teaspoons of cumin seeds .
- Let the clarified butter soak for approximately 1 minute.
- Then add the Mustard Seeds and cover the pan (this seed when heated, explodes).
- When the mustard seeds fail to burst, remove the lid and add the fresh, crushed ginger .
- When it starts to brown, add the peeled and finely chopped Tomato .
- At this point, the addition of 1 or 2 cups of water may be necessary.
- Then add the rice and then some liquid.
- This should never exceed the rice level (the grains should stick out).
- After 5 to 8 minutes, add beans.
- Add a glass or two of water if necessary, without exceeding the level of rice and beans.
- Then add the cilantro, turmeric powder and asafoetida ferrula.
- With a wooden spoon, stir the preparation periodically.
- At the end of cooking, add salt (if necessary).
- Cook until the rice and vegetables are soft, adding water if necessary.
