1# Vanilla Cake with Cranberry Sauce:

Ingredients:

  • eggs .
  • 1 tablespoon of Vanilla Extract .
  • ¼ cup canola oil (or other vegetable oil).
  • 180ml vegetable milk (soy, rice, light coconut …).
  • ½ cup granulated sugar.
  • ½ cup granulated sugar.
  • 1 ½ tsp baking powder.
  • 1 ¼ cup gluten-free flour.
  • 1 pinch salt.

Ingredients for the Cranberry Syrup:

1 ½ cups fresh or frozen blackberries .
¼ cup confectioners’ sugar.
¼ cup cassis liqueur.

Preparation mode:

  • Preheat the oven to 170˚C.
  • Grease a pan with a hole in the middle measuring approximately 20 cm in diameter with oil or dairy-free margarine and gluten-free flour.
  • In a bowl, beat the egg yolks, oil, vanilla and vegetable milk. Add the granulated sugar, the sifted flour and the yeast.
  • Beat the egg whites with a pinch of salt. When they start to foam, add the refined sugar little by little, until you reach firm peaks.
  • Incorporate 1/3 of the egg whites into the dough until smooth. Add the rest with a spatula, very gently.
  • Pour the batter into the pan and bake for about 35 minutes, until the toothpick test comes out dry.
  • Remove from the oven and leave to cool with the pan upside down (the cake will come off naturally.)
  • Serve with the accompaniment of your choice.

Cranberry Syrup:

  • Blend all ingredients in a food processor. Cover the cake and, if you like, decorate with fresh blueberries.

2# Vanilla Chocolate Cake:

Ingredients:

  • eggs .
  • 4 tablespoons of margarine/ butter .
  • 2 cups (tea) of sugar.
  • 3 cups (tea) of wheat flour.
  • 1 cup (tea) of milk.
  • 1 tablespoon of chemical yeast.
  • 1 level tablespoon of Vanilla .

Filling:

  • 1 condensed milk.
  • 3 tablespoons of nescau powder.
  • 1 can of sour cream.
  • 1 tablespoon of butter .

Roof:

  • 1 condensed milk.
  • 3 tablespoons of nescau powder.
  • 1 cup of liquid whole milk.
  • 1 tablespoon of butter .

Preparation mode:

  • In a bowl add the eggs , the margarine/ butter and the sugar and beat well, until you get a homogeneous cream.
  • Gradually add the flour, beating well, alternating with the milk.
  • Add the vanilla and mix well.
  • Finally, add the yeast and mix gently.
  • Take it to the preheated oven, in a greased and floured shape (the shape I usually use is a 26 cm hole in the middle), for 40 minutes at 180/200ºC.

Filling:

3# Vanilla Cake with Condensed Milk and Coconut:

Ingredients:

  • 2 cups (tea) + 02 tablespoons of wheat flour – replace these 02 tablespoons of flour with the same amount of corn starch.
  • 1 teaspoon of baking powder.
  • 1/2 teaspoon of bicarbonate of soda.
  • 1/2 teaspoon of salt.
  • 113g of softened butter .
  • 1 cup (tea) of sugar.
  • 1 teaspoon of Vanilla  here I usually put 01 tablespoon.
  • eggs at room temperature.
  • 1 cup (tea) of buttermilk.

Roof:

  • 1 can of condensed milk.
  • 1 packet of shredded coconut .

Preparation mode:

  • Preheat the oven to 170°C. Also prepare the baking dish: grease and flour a rectangular baking dish (mine is about 35cm). Reserve.
  • Sift the flour, baking powder, bicarbonate and salt. Reserve. In the bowl of an electric mixer, place the butter and sugar, beat well until it becomes a fluffy and light cream.
  • Continue beating on medium speed and add the vanilla and eggs one by one, always letting the dough incorporate well.
  • Gradually add the buttermilk and flour, alternating one at a time, until both ingredients are used up. Continue beating until the dough is homogeneous.
  • Distribute the dough in the form and bake for approximately 40 minutes. Do the toothpick test. When baked, remove from the oven and place to cool, preferably on a wire rack.
  • Wait about 10 minutes, then with a fork poke holes along the entire length of the cake, as shown in the photo. Then with the help of a spoon, spread the condensed milk, letting it penetrate well through the holes. Finish with the grated coconut .
  • Wait for the cake to cool completely, cut into pieces and serve.

4#  Vanilla Cake with Guava:

Ingredients:

  • 1 box of Vanilla -flavored cake mix powder (store-bought).
  • eggs .
  • 2 tablespoons of margarine.
  • 1 cup (tea) of milk.
  • 1 cup (tea) of guava , cut into cubes.
  • 50g of grated coconut .
  • Margarine and wheat flour for greasing.
  • 3 tablespoons of icing sugar.

Preparation mode:

  • In a bowl, combine the cake mix, eggs , margarine and milk.
  • Mix well and add the guava and coconut .
  • Place in a greased and floured 22cm diameter mold with a hole in the middle and bake in a preheated medium oven.
  • for 30 minutes or until a toothpick inserted comes out clean. Remove from the oven, let cool, unmold, sprinkle with icing sugar and serve.
